01 / ABOUT THE PLACE
Set along the quiet streets of Hatanodai, Kimizushi (きみずし) is a sushi restaurant where diners can appreciate classic Edomae technique along a limited-seat counter. Served for evening dinner, the omakase courses offer an unhurried rhythm, beginning with thoughtful seasonal seafood appetizers before segueing into meticulous nigiri.
The opening small plates readily invite a glass of sake, featuring items such as tender simmered octopus infused with subtle dashi, fragrant grilled shirako (milt), and carefully prepared bonito sashimi. As the meal moves into nigiri, finely scored squid that accentuates texture and classic Edomae toppings brushed with nikiri or cured in vinegar balance naturally against modestly sized mounds of rice that loosen easily on the palate. From fluffy simmered anago to crisp ark shell, every piece reflects steady craftsmanship and leaves a genuine sense of fullness.
To accompany the meal, the drink options include beer as well as sake served either chilled or warm, nicely accentuating the clean, delicate flavors of the seafood. With hospitality attuned to each diner's pace and conversational flow, the chef maintains an easygoing environment where solo guests and pairs can immerse themselves comfortably. Because dinner service operates exclusively at the counter, booking in advance is advised before visiting.
